Herb-Roasted Parsnips

The nuttiness of browned butter complements the concentrated sweetness of these roasted roots that are a nice change from the usual carrots. Watch your butter closely so that it doesn’t burn and transfer it immediately to a large bowl to stop the cooking when it is browned.

SERVES 6 ACTIVE 15 MIN. TOTAL 40 MIN.

2 lb. parsnips, cut diagonally into 2-in. pieces

2 Tbsp. olive oil

1 Tbsp. chopped fresh sage

½ tsp. kosher salt

½ tsp. black pepper

¼ cup salted butter

1. Preheat oven to 400°F. Toss together parsnips, oil, sage, salt, and pepper in a large bowl until coated. Spread mixture evenly on a rimmed baking sheet lined with aluminum foil.

2. Bake in preheated oven until lightly browned and tender, about 25 minutes, stirring once after 15 minutes.

3. Melt butter in a small skillet over medium. Continue cooking, stirring occasionally, until brown and fragrant, 3 to 5 minutes.

4. Toss together roasted parsnip mixture and browned butter in a large bowl. Serve immediately.
